I had never before attempted a puff pastry or a Welington – and they both came out wonderfully! My full-puff pastry was really very fun to make and yielded no soggy bottom! In addition, I was very pleased that I managed to make a delicious vegetarian version of a classically meat dish.
Describe how you added a Wisconsin twist to your creation.
My vegetarian Wellington's filling was made from onion, kale, and beets all bought from our New Glarus farmer's market the day before. I love using locally-sourced, fresh produce, and getting to chat with the vendors about the adventures I have with their goods!
