Milwaukee Spiced Roulade. I made a carrot cake roulade with cream cheese frosting

What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!

I was very surprised and relieved when my cake did not crack when I rolled it. I learned it HAS to be warm when rolled, but I was a bit nervous to roll it fearing it would crack. I then remembered what Julia Child always said "Be fearless and above all else, have fun!"

How did you add a Wisconsin twist to your flavors or decoration?

I used carrots from my CSA box from a local Wisconsin farm, Wellspring Farms. All the beautiful aromatic spices in the cake were from a local spice shop called The Spice House that has been around since 1957.
