Ginger-Lemon Icebox Cake with a Spicy Twist! My torte cake this week was a refreshing but kicky creation. Alternating layers of Wisconsin whipped cream lemon filling and spicy gingersnaps created three layers of goodness, and the cookies soften as they chill – as well as spice this cake up!
What was the biggest surprise during your baking journey? Did you use any unconventional approaches? What did you learn along the way? Tell us about it!
How much the ginger snaps softened up, but kept their spice! I had never made an icebox cake, considered retro. This chilled creation and many others were extremely popular in the '50s and '60s.
How did you add a Wisconsin twist to your flavors or decoration?
Used Wisconsin heavy cream and made it into whipped cream for my filling.
